Skirted Heifer started with a simple idea during a casual chat between Kevin and Suzette Megyeri. They wanted something that would fit in their family’s downtown building. Already running a successful Italian restaurant, they decided to try something new. At home, they melted cheese around burgers until it crisped up like a skirt. That signature idea became the name—and the heart—of Skirted Heifer.

Every burger at Skirted Heifer is made with grass-fed, grass-finished beef. The buns are baked in-house, and the condiments are made fresh. It’s all done with purpose—nothing is overdone or left to chance. Quality comes first, and that includes eco-friendly choices. From the grill to the plate, each burger is built with care. From Local Favorite to National Recognition
Skirted Heifer has been voted “Best Burger” six years in a row by local Colorado Springs publications. It was even featured on Food Network’s Diners, Drive-Ins and Dives, where Guy Fieri tried the famous Hangover Burger. The recognition didn’t stop there—Suzette and Kevin also appeared on Guy’s Grocery Games. But even with national attention, the focus remains local: real food, served right, every single day.
Built for Burgers, Driven by Sustainability
Skirted Heifer is all about good food and smart choices. Our take-out boxes and napkins are made from 100% recycled materials. We use compostable cups made from plants, not plastic. Frying oil gets recycled into biodiesel. Inside, our tables are built from reclaimed firewood, and the floors are bamboo—a fast-growing, renewable source. Even our kitchen equipment is Energy Star rated. Every step helps reduce waste and protect the environment.
